Tamagoyaki
Tamagoyaki is a Japanese rolled omelet made by layering thin sheets of seasoned egg, flavored with sugar and mirin, and cooked in a rectangular pan. It's light, slightly sweet, and typically served as a breakfast dish or sushi topping. Check out more of Sarah's Asian-inspired recipes on her blog.
Instructions
- 1
Mix the 4 eggs in a bowl until the whites and yolks are evenly combined. Add the dashi powder, sugar, mirin, and salt, and mix to combine.
- 2
In a rectangular pan, turn on heat to low and oil the entire pan. Wipe off excess oil with a paper towel.
- 3
Pour a thin layer of tamagoyaki mixture into the pan, and once it is cooked, start rolling the egg from the opposite side towards you. You should have a little egg roll; then push it to the opposite side of the pan.
- 4
Repeat by pouring in another thin layer of egg, following the same steps. Once cooked, roll the cooked side of the egg over onto the new egg mixture, then roll over again until you reach the end of the pan closest to you.
- 5
Slide the cooked egg to the opposite side and repeat the process 3-4 more times until the egg mixture is gone. Remove off heat and let it cool before cutting.
- 6
Enjoy!
