Trim the root ends of the enoki mushrooms, and separate them into smaller bundles. Set aside.

In a bowl, stir together the soy sauce, gochujang, gochugaru, sugar, rice vinegar, and sesame oil. Set aside.

Heat the vegetable oil in a medium pan over medium heat until hot. Add the garlic. Cook, stirring often, for about 1 minute, or until lightly golden.

Add the sauce to the pan. Bring to a simmer over medium heat. Stir in the mushrooms until evenly coated in the sauce. Cover and let cook for about 5 minutes, or until the mushrooms soften.
