
Katie’s One-Pot Sausage Gnocchi Bake
This flavorful, veggie-packed one-pot dish is simple to throw together any night of the week. Mix your favorite store-bought gnocchi and marinara sauce with a few other ingredients for the easiest, most delicious meal. My daughter doesn’t like anything green, but she loves tomatoes, so for this recipe, I like to grate a zucchini and cook it with the sausage and marinara sauce, and she loves it!

Preheat the oven to 375°F (190°C).

In a large ovenproof skillet, heat the olive oil over medium heat. Add the shallot and season with ¼ teaspoon salt. Cook, stirring occasionally, for 3-4 minutes, until softened.

Add the sausage, breaking it up with a spoon, and cook for 3-4 minutes, until browned and slightly crispy.

Add the zucchini and cook for 1-2 minutes, until softened.

Remove from the heat and stir in the marinara sauce, gnocchi, chicken stock, ¼ cup Parmesan cheese, Italian seasoning, garlic powder, and the remaining ¼ teaspoon salt until well combined.

Add the mozzarella balls on top of the gnocchi mixture. Sprinkle with the remaining ¼ cup Parmesan cheese.

Bake uncovered for 20 minutes, or until the gnocchi is tender and the cheese is melted and bubbling.

Garnish with fresh basil to serve, and enjoy!
