Using a slotted spoon, transfer the garlic to a paper towel-lined plate. Season with a pinch of salt, and let cool slightly, 3–4 minutes.

    Make the salad: Place the lettuce, chicken, carrots, wonton strips, ginger, cashews, avocado, scallion, and fried garlic chips in a large bowl. Drizzle with the dressing, and toss gently to coat.
