Stir together the water, sugar, potato starch, and ¾ cup of the rice flour in a microwaveable bowl. Wrap the bowl tightly with plastic wrap. Using a toothpick or fork, poke small holes into the wrap for ventilation. Microwave on HIGH for about 3 minutes, or until the liquid is fully absorbed by the flour mixture.

Remove the plastic wrap. Add the butter to the flour mixture, and stir together using a spatula until the butter is melted and roughly incorporated into the dough (it will be chunky).

Dust a work surface with 2 tablespoons of the rice flour. Dump the mochi dough onto the work surface. Dust the dough all over with the remaining 2 tablespoons rice flour.

Using your hands, knead the dough until it becomes a soft and smooth ball, about 2 minutes. Divide the ball evenly into 6 pieces.

Roll out each mochi piece on the work surface, and shape into a ¼-inch-thick disk. Wrap each piece of fruit in 1 mochi disk, and pinch to close (remove any extra mochi skin from the sealed ball). Serve immediately.
