Mix in some butter to taste and season with salt. Set the mashed potatoes and potato shells aside. Turn on the oven's broiler.

    In a Dutch oven, melt 4 tablespoons butter over medium heat. Add the onions and ¾ teaspoon salt. Cook, stirring occasionally, for 30-45 min, until onions caramelize to golden brown.

    Add the flour and cook for 3 minutes. Add the wine to deglaze the pot and bring to a boil. Allow the mixture to thicken. Add the thyme. Slowly pour in the warm broth and let the mixture boil uncovered for 10 minutes, or until it is reduced by half. Season with salt and pepper.

    Arrange the potato shells on a baking sheet. Ladle the onion soup into the potato shells and cover with the mashed potatoes. Sprinkle generously with the cheese.
