
Cajun Sausage & Rice Skillet
This is a spicy and savory one-pan dish featuring Johnsonville® Andouille Rope Sausage, bell peppers, onions, and rice, seasoned with Cajun spices for a flavorful Southern-inspired meal. In a large skillet over medium heat, add the oil and heat until shimmering. Add the Johnsonville® Andouille Rope Sausage and sauté for about 7 minutes, or until golden brown and crispy. Remove to a paper towel-lined plate to drain.

In the same pot, add the bell peppers and onion and sauté for about 8 minutes, or until tender. Stir in the garlic and Cajun seasoning and cook until fragrant. Add the rice, tomatoes, and green chilis; mix until well combined. Stir in the chicken stock and salt. Cover and cook for 25-30 minutes, until rice is tender.

Remove from the heat and fluff with a fork. Add the cooked sausage and a quarter of the scallions; mix until incorporated.
