Instructions
- 1
Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
- 2
In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
- 3
Grate 2 sticks of frozen butter over the bowl and mix with your hands until the mixture is crumbly.
- 4
Add the chilled buttermilk and mix with a wooden spoon until a shaggy dough forms.
- 5
Lightly dust a clean surface with flour and add the dough.
- 6
Flatten the dough into a 9 x 7 x 1½-inch rectangle. Fold the right side to the center, and then the left side over the top, folding like a letter.
- 7
Flatten the dough again into a rectangle with your hands. Next, fold from top to bottom, then flatten it again. Repeat this folding and flattening process about 5 times.
- 8
Roll out the dough to a thickness of 1½ inches. Use a 3-inch round cutter to cut biscuits and place on a baking sheet pan with parchment. Freeze for 10 minutes.
- 9
Brush with 1 tablespoon melted butter and bake for 20 minutes, or until golden brown.
- 10
Remove from the oven and brush with more melted butter.
- 11
Enjoy!
