Instructions

    Heat the oil in a hot pan over medium. Add the onion, and sauté, stirring occasionally, until fragrant, 1–2 minutes. Add the sausages, and sauté, stirring occasionally, until the sausages get toasty, about 3 minutes.

    Add the crushed tomatoes, and mix to combine. Stir in the fish sauce, sugar, and black pepper.

    Top with the pâté and eggs, and season eggs with a few cracks of black pepper. Cover and let simmer until the eggs are done to your liking, 3–6 minutes.

    Once the eggs are done, top the dish with scallions, cilantro, and cucumber. Serve with a fresh baguette.
