Heat avocado oil in a large nonstick pan or wok over medium-high heat.

Add the minced garlic and cook, stirring often, until golden brown and crunchy, about 3-4 minutes.

Remove the crispy garlic from the pan, leaving the garlic-infused oil in the pan.

Increase the heat to high and add the chilled rice. Break up clumps with a spoon and toss in the oil. Continue to cook for 4-5 minutes, until rice is fried and no large chunks remain.
