
Thit Kho (Vietnamese Caramelized Pork And Eggs)
If you know you know–this dish either brings back fond memories or it’s your biggest nightmare. For Sarah, her mom would make this easy dish on the regular and she absolutely loved it, but for others, eating this dish on repeat for the entire week would be their biggest nightmare. Regardless of what side you’re on, there is no doubt that this dish brings back and creates nostalgic memories for everyone who takes a bite!

Hard-boil your eggs of choice (if using quail eggs, boil for 6 minutes). Peel the eggs and set aside.

In a medium pot over medium heat, melt the sugar until the color deepens to look like caramel, about 2 minutes.

Add the pork belly and stir to coat in the caramel until fragrant, about 6 minutes.

Add the garlic, shallots, and Sprite. Stir and bring to a simmer, then add the fish sauce, soy sauce, quail eggs, Thai chiles, and black pepper. Simmer for another 10-15 minutes, or until the liquid reduces.

Garnish with scallions and serve over hot rice.
