Instructions

    In a pan over medium heat, add the oil. Add the onion and garlic; cook, stirring occasionally, until aromatic, about 3 minutes.

    Add the seasoned meat. Cook over medium heat, using a spatula to break down the meat into smaller chunks, until most of the meat has browned, about 5 minutes. Add the roma tomatoes. Cover and cook until the tomatoes break down, about 2 minutes. Uncover and stir in the water.

    Stir in the remaining ½ teaspoon salt, ½ teaspoon black pepper, and 1 tablespoon fish sauce. Add the cherry tomatoes, and simmer over medium-low heat, covered, for about 3 minutes, or until the pork is cooked through.

    Season to taste with more fish sauce, and garnish with scallions. Serve with a bowl of hot rice.
