Shakshuka is a North African and Middle Eastern dish of poached eggs in a spiced tomato and pepper sauce. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook until softened, about 5-7 minutes.

Add in the diced red peppers, tomato paste, cumin, chili powder, paprika, red pepper flakes, garlic powder, salt and pepperCook for another minute until fragrant.

Pour in the diced tomatoes andfish sauce.. Let the mixture simmer, covered, for about 10-15 minutes, until it thickens slightly.

Make small wells in the sauce with the back of a spoon, and crack an egg into each well. Cover the skillet with a lid and cook until the eggs are just set, about 5-8 minutes. Top with feta cheese and garnish with chopped parsley. Serve hot with crusty bread for dipping.
