
One-Pot Pad Thai

Instructions

Cook the noodles according to the package instructions. Drain and toss with 1 tablespoon of sesame oil, then set aside.

Add ½ teaspoon of the sesame oil to a large pot over medium-low heat. Pour in the eggs and scramble until set, then remove from the pot.

Add the remaining ½ tablespoon of sesame oil to the pot over medium heat, then add the diced chicken breast. Cook until no longer pink in the middle, then set aside.

Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back to the pot.
